This bittersweet chocolate delivers 72% high cocoa solids
with low roast liquor, which is reflective of European-style. Despite
its high cocoa content, the flavor remains rich and balanced—not
bitter like many of the 72% products out in the market place.
Because the chocolate is aged, the flavors are mellow.
A strong vanilla flavor—which comes from real vanilla, not vanillin—complements
the characteristics of the chocolate liquor. Available now, Peter’s
Cambra™ Bittersweet Chocolate is made in 10 lb. blocks and is available
in 50 lb. cases.
