PETER'S® ICECAP® CONFECTIONERY COATINGS
Peter's® Icecap® confectionery coatings have a creamy mouth feel with no waxiness. Good for hand dipping, moulding, and enrobing. Not to be confused with real chocolate that contains cocoa butter. These products are made with other vegetable fats for error-free handling without the need for tempering. Packed 5 blocks per case – net weight 50 lbs.
PRODUCT   VISCOSITY
Westchester®   95°
A milk chocolate flavored coating, frequently used in moulded items as no tempering is required.
       
Eastchester®   80°
A semisweet chocolate flavored medium dark coating. Used in a wide variety of bakery applications.
       
White Icecap®   140°
The basic pastel coating. Can be used as is or colored and/or flavored with oil-based products.
