Sugar Free Lemon Tea Truffles
3 lbs. Peter’s® White
Sugar Free coating
3/4 lb. Maltitol
syrup
1/2 lb. Heavy
cream
1/4 lb. Dairy
butter
3 oz. Instant
tea (dissolved in 2 oz. hot water)
0.075 oz. Potassium
sorbate
Lemon
oil to suit
Peter’s® Dark Chocolate Flavored Sugar
Free coating
Combine cream, butter, potassium sorbate and maltitol syrup. Heat
until scalded. Add tea solution and mix. Whisk in melted Peter’s® White
Sugar Free coating and mix until consistent. Add lemon oil
to taste. Shell mould or enrobe with Peter’s® Dark
Chocolate Flavored Sugar Free coating.
Yield: Approximately 125 pieces
