Parmesan Stuffed Dates

100   Large pitted dried dates
250 g   High quality solid parmesan cheese, room temperature
    Peter's® Cambra™ bittersweet chocolate

Cut parmesan cheese into long thin pieces approximately " x " x 1 ". Slice each date lengthwise with a paring knife and insert parmesan cheese to fill the empty area where the pit was. Bottom and enrobe with tempered Peter's® Cambra™ bittersweet chocolate.
