Spicy Cherry Truffles
8 oz. Heavy cream
16 oz. Peter’s® Ultra® milk chocolate
16 oz. Peter’s® Burgundy® semisweet chocolate
Black cherry flavor as desired
Chili flavor as desired
Scald cream and let cool to 180° F. Whisk in chopped pieces of Peter’s® Ultra® milk chocolate. When cooled to less than 130° F, add flavors as desired. Deposit into shells made with Peter’s® Burgundy® semisweet chocolate and bottom.
Yield: Approximately 72 pieces
