Bacon Bit Truffles

680 g   Peter's® Madison® milk chocolate
225 g   Heavy whipping cream
225 g   Peter's® caramel loaf
454 g   Peter's® Malan™ milk chocolate
    Bacon bits (finely chopped use as many as desired)

Scald cream and whisk in caramel loaf. Let cool to 160 F and whisk in pieces of Peter's® Madison® milk chocolate. Mix until consistent. Let cool for at least 3 hours in the refrigerator. Once cool, scoop and roll into 1 inch balls. Place on a sheet with parchment paper. Temper Peter's® Malan™ milk chocolate. Once tempered, add bacon bits to chocolate as desired. Coat in Peter's® Malan™ milk chocolate (once or twice) and sprinkle more bacon bits on top of the truffles if desired. Cool and enjoy.

Yield: 48 truffles
