Chocolate
Dipped Strawberries
5 lbs. Fresh strawberries
3 lbs. Peter’s® Burgundy® semisweet chocolate
Choose fresh, ripe strawberries with bright green hulls. Rinse the
berries
and gently pat dry. Allow the berries to warm to room temperature.
Pre-bottom with tempered Peter’s® Burgundy® semisweet chocolate and
allow bottoms to set. Then dip 3/4 of the way into chocolate. For best
gloss, allow dipped fruits to set in a 55-60° F room or cooling
cabinet with good air movement.
Yield: Approximately 80 pieces
